Recipes
Orange Duck Breast

Four 6 oz duck breasts (skin on)

Marinade:

  • ½ tsp orange zest
  • ¼ cup orange juice (fresh)
  • 1/8 cup soy sauce
  • 1 Tbs honey
  • ½ tsp white vinegar
  • ½ tsp diced red hot pepper flakes

In medium bowl create marinade.  Score fat on breasts with boning knife and marinate. In sauce pan sauté duck breast skin side down to a nice brown color.  Turn breast in pan and sauté 8 to 10 minutes, draining fat occasionally.
